These satays are super delish. The marinade you use for the chicken can be used for beef or lamb too. Even without the satay sauce, these kebabs are great with some fresh capsicum, red onion, mushroom and courgette with the marinated chicken on the bbq in the summertime.
Ingredients for kebabs:
2 chicken breasts
1 clove of garlic, crushed
2 t coriander (ground or fresh)
Juice of 1 lemon
2 T soy sauce
Skewers
Sauce:
1 clove garlic
1 small onion
¼ t chilli powder
1 T soy sauce
1 T peanut oil (can use olive oil)
½ c crunchy peanut butter
¾ c water
2 t brown sugar
Ingredients for kebabs:

2 t brown sugar
- Cut chicken into cubes and put in bowl with lemon juice, garlic, coriander and soy sauce. Mix well and set aside (this marinade is good if you want a quick marinade for a chicken dinner and doesn’t take long to absorb the flavours)
- Fry the chopped garlic and onion gently in a saucepan until soft and golden. Add remaining sauce ingredients and simmer until thick
- Thread chicken onto skewers and grill under preheated grill for 3-4 mins each side, brushing with leftover marinade
