Ingredients
2 cups flour
4 tsp baking powder
½ tsp salt
Freshly ground black pepper
Chopped fresh herbs - parsely, chives etc
1 cup grated tasty cheese (or ½ cup Colby/Edam and ½ cup parmesan)
½ tsp curry powder
1 egg
1 ¼ cups milk
¼ cup oil
Any bits you want (I use roasted red capsicum, handful of pinenuts, 100g cubed feta, 1 red onion, roasted kumara/pumpkin)
Prepare any of your bits. Chop roasted red capsicums. Cook red onion with a little oil til soft but not brown. Toast pinenuts in the same frypan. Cool. Roast cubed pumpkin or kumara (if using pumpkin, then toast 1 tsp of cumin seeds too).
Mix together all the dry ingredients and add herbs and cheese.
In a separate bowl, whisk together egg, milk and oil. Mix wet ingredients into the dry mixture - be very careful not to overmix. Add all the prepared bits at once and very gently fold through.
Put spoonfuls into muffin tins and top with a few bits of grated cheese. Cook at 200⁰C for 20 minutes or til browned and knife comes out clean.
